Description

The Pommard Les Vaumuriens from Domaine Huber-Verdereau is a rather expressive wine. Not too harsh on the palate, with hints of spice and pepper. Best enjoyed with red meat, mature cheeses or even fish served with spicy sauces.

In the vineyard, in the cellar

Certified organic and biodynamic cultivation. Use of compost in the vineyards, regular ploughing to maintain the soil. No synthetic products are used, only Bordeaux mixture and herbal infusions (dandelion, nettle, horsetail, birch, etc.). Work is carried out in accordance with the phases of the moon and certain planetary positions. Yields are carefully controlled. Traditional winemaking methods.

The Pommard Les Vaumuriens from the Huber-Verdereau estate comes from an 82-are plot, with vines aged between 40 and 86 years. Harvested exclusively by hand into 50-litre crates. Double sorting of the harvest in the vineyard and on the sorting table. Cold pre-fermentation maceration for 4 to 5 days, followed by alcoholic fermentation with one punch-down per day at the start. A total of 26 days’ maceration before devatting and pressing. Aged in barrels for 12 months.
