Description
Classified as a Premier Cru, the Les Frémiets vineyard is one of Volnay’s finest terroirs, lending the wines elegance and refinement: this is certainly true of this cuvée from Domaine Huber-Verdereau. The aromatic intensity is striking, with notes of ripe cherry, raspberry and floral hints. The palate is supple, supported by fine tannins; it lingers on the finish without ever losing its sense of fruit. A great Volnay that will need a few years’ ageing to fully appreciate all its dimensions.
In the vineyard, in the cellar
Certified organic and biodynamic cultivation. Use of compost in the vineyards, regular ploughing to maintain the soil. No use of synthetic products, only Bordeaux mixture and herbal infusions (dandelion, nettle, horsetail, birch, etc.). Work carried out in accordance with the phases of the moon and certain planetary positions. Yield control. Traditional winemaking methods.
11 ares of vines over 30 years old. Harvested exclusively by hand, in 50-litre crates. Double sorting of the harvest in the vineyard and in the winery on a sorting table. Cold pre-fermentation maceration for 4–5 days. Total vatting time: 25 days. Matured in 1 x 300-litre Allier oak barrel for 14 months.
