The Volnay from Domaine Huber-Verdereau
is a wine of the utmost finesse. Notes of raspberry, fresh blackcurrant and fern unfold on the palate with a lively, tangy freshness that highlights crisp tannins. The palate is juicy, with no gaps, and coats the mouth well. The finish softens with aeration, giving way to a lovely, long-lasting finish.
In the vineyard, in the cellar
Certified organic and biodynamic cultivation. Use of compost in the vineyards, regular ploughing to maintain the soil. No use of synthetic products, only Bordeaux mixture and herbal infusions (dandelion, nettle, horsetail, birch, etc.). Work carried out in accordance with the phases of the moon and certain planetary positions. Yield control. Traditional winemaking methods.
Plots of 80 ares of vines aged 18, 46 and 50 years. Harvested exclusively by hand, in 50-litre crates. Systematic sorting of the harvest in the vineyard and in the winery. Cold pre-fermentation maceration for 4 to 5 days, followed by alcoholic fermentation without any punching down. Temperature control at the end of fermentation to bind the tannins. Vatting period of 25 days. Aged in barrels for 12 months.
