Description
Château La Fon du Berger
’s 2019 Pauillac is sourced mainly from deep gravelly slopes, adjacent to the vineyards of several grands crus. It is both robust and powerful, yet refined and elegant, with a delicate, mature bouquet. Dark fruit, floral notes, tobacco, undergrowth, and
a hint of menthol and spice. The palate is full and fleshy, with the tannins gaining depth as the wine is savoured. The finish is long and flavourful, with lovely structure. A great wine!
In the vineyard, in the cellar
Grape varieties of La Fon du Berger’s Pauillac:
- 65% to 80% Cabernet Sauvignon depending on the vintage
- 20% to 35% Merlot depending on the vintage
Vinification:
The grapes are sorted and destemmed. Fermentation takes place in stainless steel vats for 6 to 10 days at a temperature of between 24 and 26°C. The wine is left to mature in vats for 3 to 4 weeks to extract the full potential of the terroir. Ageing: 12 to 14 months in French oak barrels, with 75% new oak.
