Description
Domaine Le Clot de l'Origine treats us to a ‘Soif de Plaisir’ cuvée with a profile that is at once fruity, floral and mineral. Red fruits take centre stage, with hints of undergrowth and a lovely floral touch. The palate confirms the elements detected on the nose, with a certain richness. And there is always that mineral tension which ensures the wine is utterly delicious. It will be just as at home with a grilled steak as with vegetables cooked à la plancha.
In the vineyard, in the cellar
The Soif de Plaisir cuvée from Le Clos de l'Origine estate in detail:
- Grape varieties: 70% Carignan and 30% Syrah
- Soils: Brown schist and schistose marl
- Terroir: Caudiès de Fenouillèdes
- Farming: organic. Ploughing and grubbing once a year. Clearing of vines with a pickaxe. Treatments with sulphur, copper and essential oils.
- Vinification: Destemmed. Fermentation in casks for 15 days. No fining or filtration
- Ageing: Large casks on fine lees.
