Description
La Compagnon from Domaine Ledogar is an exceptionally well-crafted Corbières wine. The bouquet is dominated by intense fruitiness (blackberry, sloe) with hints of thyme and clove. It fills the palate completely, offering lovely depth and silky, luscious tannins. Its finesse and irrepressible vitality make this wine a true delight.
In the vineyard, in the cellar
The Domaine Ledogar La Compagnon Corbières cuvée in detail:
- Grape varieties: Grenache 60%, Carignan and Mourvèdre 30%, Syrah 10%.
- Terroir: Clay-limestone soils, sandstone and red clay on the edge of a pine forest.
- Vinification method: Grenache and Syrah vinified separately; Carignan and Mourvèdre blended during vinification. Grapes sorted on the vine, then destemmed and crushed. Alcoholic fermentation begins at 15°C, followed by temperature control maintained around 22°C. If necessary, pumping over at the end of fermentation to oxygenate and thus complete the conversion of sugars (indigenous yeasts). Daily tasting to assess the maceration time required to extract all the organoleptic qualities of the berries. If necessary, racking before the end of fermentation to avoid extracting too much substance. We aim to produce wines with lovely body yet full of finesse and very easy to drink.
- Ageing: Ageing in vats without sulphites, 2 to 3 rackings to clarify the wine. Bottling without fining or filtration, which may result in a sediment in the bottle. Addition of 2 g/hl of SO2 at bottling.
