Description
Les Peyres Levades by Sophie and Julien Ilbert (Combel La Serre) is a fine Cahors wine with excellent ageing potential that will reward your patience. The austere limestone soils of the Causse do not prevent one from already glimpsing the wine’s immense potential, nor its seductive charm. The nose offers deep black fruit (blackcurrant, plum, blueberry) complemented by notes of menthol, pepper and violet. It is impossible to deny its graphite-like terroir with such minerality! The extraction is spot on, the tannins fine and pronounced, the finish still a little tight but so elegant. A very fine bottle for connoisseurs to wait a few more years for optimum enjoyment.

The Cahors Les Peyres Levades de Combel La Serre cuvée in detail:
- GRAPE VARIETY: 100% Malbec (vines around fifty years old)
- TERROIR: limestone soils of the Causse. A single plot located in the hamlet of Peyres Levades in Cournou at an altitude of 350m
- VINIFICATION: Vinification begins with a maceration period of around thirty days, followed by ageing in truncated-cone casks for two years.
A breath of fresh air for "Black Wine"
Historically known as “Black Wine” due to the dark, purplish colour of its Malbec grape, Cahors has long been regarded as an austere wine. “Dad’s wines”, as they are sometimes referred to in tasting circles. However, spurred on by a new generation of winemakers, Malbec has been showing a new side for the past twenty years or so.
