Description
La Côte is undoubtedly the most distinctive Saint-Véran from the Pacaud estate. A delicately structured wine with a sharp minerality that evokes citrus aromas, a subtle hint of apricot and hints of fresh almonds. The mineral tension runs through the wine from start to finish and will pair wonderfully with the briny notes and delicate flesh of a fine fish.

- CUVEE: Domaine Pacau, Saint-Véran La Côte
- GRAPE VARIETY: 100% Chardonnay – 30-year-old vines.
- VINEYARD: Vines in the village of Chasselas, between 300 and 400m above sea level, south-facing
- SOILS: Shallow, hard limestone soils very rich in iron oxides (very red, ochre-coloured soils)
- VINIFICATION: Hand-harvested, whole bunches taken directly to the press. Direct pressing. Sulphur-free vinification using indigenous yeasts. Light settling.
- AGEING: 50% aged on fine lees in 500-litre oak barrels (used for 3 to 5 vintages) for 10 months; the remainder of the cuvée is aged in concrete and stainless steel vats.
