In the vineyard, in the cellar
Bourgueil appellation, 100% Cabernet Franc. The grapes are destemmed for a three-week alcoholic fermentation (juice and whole berries throughout the alcoholic fermentation) using indigenous yeasts. Malolactic fermentation takes place in two-year-old barrels without the use of sulphur—neither at harvest, nor during vatting, nor during vinification, nor at bottling.
