Description
This Arbois cuvée from Stéphane Tissot is made from Poulsard grapes that have been macerated for three months in 420-litre amphorae and vinified without sulphur. The wine offers lovely aromatic depth of red berries (raspberry, strawberry), a smoky note and a vibrant minerality. On the palate, it is flavourful and full-bodied, combining freshness and intensity in a precise style of great purity.
In the vineyard, in the cellar
- Terroir: This wine comes from a Triassic clay soil
- Vine age: 20 years
- Planting density: 7,000 vines/ha
- Production: 2,400 bottles
- Cultivation methods: Biodynamically managed vines, Ecocert certified and Demeter inspected. The vines are cultivated without weedkillers, chemical fertilisers or synthetic products. We use sulphur, copper and herbal infusions to treat the vines. We produce and apply our own compost. These vines are fully ploughed.
- Vinification and ageing: Hand-harvested, destemmed by hand, then placed in 420-litre amphorae without SO2. Maceration for 3 months. After pressing, we carry out a short ageing period of 3 months in amphorae with topping up, followed by bottling without SO2 and without filtration.
