Description
Due to the climatic hazards of 2023, the three usual parcel cuvées from Combel La Serre (Au Cerisier, Le Lac aux Cochons, and Les Peyres Levades) are blended into a single cuvée: Un cerisier, des pierres et des cochons. Aged in concrete tanks, the wine harmoniously preserves the fruit: cherry burlat slightly kirschée, violet, white pepper. The palate is both dense, juicy and silky with this freshness that characterizes the limestones of the Causse in altitude.
Method of working
The Cahors Un cerisier, des pierres et des cochons de Combel La Serre cuvée in detail:
- GRAPES: 100% Malbec (average age 40 years)
- YEAR: 2023
- TERROIR: several plots on the limestone Causse, all located at more than 300 meters above sea level
- VINIFICATION: maceration for about 30 days
- AGING: 15 months in concrete tank
- CROP: organic
A breath of fresh air for “Black Wine”
Historically known as “Black Wine” due to the dark, purplish colour of its Malbec grape, Cahors has long been regarded as an austere wine. “Dad’s wines”, as they are sometimes referred to in tasting circles. However, spurred on by a new generation of winemakers, Malbec has been showing a new side for the past twenty years or so. Thanks to clean, small-scale viticulture, these new estates offer more approachable wines that emphasise fruit at the expense of extraction and structure.
