Description
Les Originelles Blanc de Noirs is an iconic champagne cuvée from the Julien Chopin estate. A superb extra brut champagne made primarily from Pinot Noir grapes grown in the Monthelon terroir. This yields grapes that are more delicate and fruity, with less emphasis on structure. The low dosage highlights the cuvée’s perpetual reserve. It is a champagne with a vinous and smooth character, featuring fruity aromas and hints of spice, aimed primarily at those who appreciate fine effervescence and purity. A profile suited to both aperitifs and fine dining.
Tasting
The deep, golden colour reveals an extremely fine effervescence. The initial nose reveals a hint of hazelnut and a sensation of baguette against a backdrop of cherry. The first impression on the palate is dynamic, marked by a crisp acidity and a lively effervescence. Following this attack of great purity, the wine reveals its structure, richness and concentration. The finish is taut, long and very clean. It concludes with a lovely touch that is both tangy and mineral.
In the vineyard, in the cellar
The Chopin estate, located in the village of Monthelon (south of Épernay), has been cultivating vines since the 18th century, but it was not until 1947 that the Julien CHOPIN brand was established. The vines are cultivated in accordance with Champagne traditions, whilst also employing a system of integrated pest management to protect the environment.
What to eat with a Julien Chopin Les Originelles Blanc de Noirs Champagne?

- A delightful aperitif, it pairs well with puff pastry canapés or lightly smoked fish on toast (salmon, trout, eel), or even thinly sliced cured ham. The dining table remains its true domain, whether served with a chicken and mushroom fricassee or as an accompaniment to a fillet of turbot. Few desserts, however, with the exception of a salad of strawberries and other red berries.
