Understanding organic wines
Recognised in France under the AB label since the 1980s, organic farming was initially intended to ensure compliance with a set of rules governing soil management, in accordance with specifications designed to preserve soil quality, natural resources and the environment, whilst supporting the continued existence of local farming communities. However, this designation offered no guarantees regarding the winemaking process.
This final shortcoming has been addressed since 2012 by the regulated ‘organic wine’ designation (Ecocert), which is governed by European specifications extending the rules to include winemaking practices. This has not been without controversy, as there remain some significant disagreements regarding the excessive use of inputs, particularly in relation to exogenous yeasts, acids and sulphur levels (SO2).
